Local Oysters
We serve oysters that are harvested in Brisbane Water, the waterway you see from our front window. Contact us to order your fresh oysters.
They are delivered to us directly by Farmer David as close as possible to when they are to served.
Our most local product is a mouthful of flavour perfectly accompanied by one of our drinks.
What Farmers David and Damo do not know about oysters isn’t worth knowing. They’re patient gems who spend time telling us amazing facts about their oysters.

HOW DO YOU LIKE YOUR OYSTERS?
- We serve them three ways:
a. Natural : Freshly shucked with a wedge of lemon.
b. Loco : Top with our chilli, onion, tomato sambal.
c. Kilpatrick : House made bacon and worcestershire topping, served hot. If you prefer take away, we can provide kilpatrick topped oysters cold ready for you to pop under the grill before serving.

2. Contact us to order your oysters, anytime. If we do not have oysters in stock we’ll order them in, for you, direct from the farmer.
OUR NATIVE OYSTERS
3. We know Saccostrea glomerata as Sydney Rock Oysters but they are also found in other parts of Australia and New Zealand. We will call these Central Coast Rock Oysters because they are native to our region and live here with us.

4. Our oysters are plump because they take three years to grow.

5. Luckily for us, our Brisbane Water oysters are not seasonal and are available all year round. Winter oysters have a slight grey tinge due to Winter fat. There is no taste change between seasons, fresh, salty like the sea all year round.
RESPECT FOR THE LOCAL OYSTER FARMERS
6. We keep them whole, in conditions recommended by Farmer David, until it’s time to prepare them for service. Even our method of shucking was taught by David*. The amount of care he and Damien take with their product spurs us to be extra careful.
LET’S CELEBRATE OUR MOST LOCAL PRODUCE
7. We hold occasional Celebration Of Oyster days. A ticket gets you a shucking lesson, knife to take home and a dozen oysters. Drinks, snacks and additional oysters to shuck are available, too. Once you know how to shuck you are a member of the club.
